Honey Varietals

Rātā Honey

Rātā honey is renowned for its striking creamy white colour, smooth texture and subtle flavours of sea salt and caramel.

This exceptional native honey from nectar of the native Rātā flower is recognised as one of the world’s finest and rarest honeys. The brilliant red flowers of the native Rātā bloom once every 3-4 years, draping bush clad mountains in a fiery, red cloak. Rātā honey is harvested from deep tracts of native forest in some of the most remote regions of Aotearoa - New Zealand.

About Rātā

Rātā (Metrosideros umbellata) is a majestic native tree of New Zealand, renowned for its vibrant scarlet-red flowers that burst into bloom during summer, creating a stunning display of color in the forest canopy. Often mistaken for its close relative, Pōhutukawa, Rātā is typically found in cooler, wetter forests, clinging to steep hillsides or emerging as a towering giant in lowland areas, reaching heights of up to 25 meters. Its dense, dark green foliage and rugged, gnarled trunk give it a robust, enduring presence in the landscape. The brush-like flowers, with their matchstick-long pollen stalks crowned with bright yellow pollen, produce a generous amount of sweet nectar, attracting native birds and bees and resulting in rich, flavorful honey. Traditionally, Māori valued Rātā for its strong, durable timber used in carving and construction, while its bark and leaves were prepared as infusions to treat wounds and skin infections, reflecting its importance in both cultural heritage and natural ecosystems.
