Native Beech Honeydew


Discover the rare and luxurious New Zealand Beech Honeydew, a distinctive, naturally dark, and aromatic honey harvested from the pristine beech forests of New Zealand’s South Island. Unlike floral honeys, this raw, unpasteurised honeydew is produced when native scale insects extract sap from the towering black beech (Nothofagus solandri) and red beech (Nothofagus fusca) trees, leaving behind a nutrient-rich nectar that bees collect and transform into one of nature’s most unique honeys.

Beech Honeydew is liquid honey, medium-dark amber in colour. It exhibits a bold flavour profile with complex taste. Cherished for its full-bodied, malty flavour with subtle caramel and woody notes, Beech Honeydew is a favourite among chefs, artisan producers, and health-conscious consumers worldwide. Beech Honeydew is a fine complement for strong flavours, such as pears, apples and blue cheese. Equally adds an excellent flavour boost to muesli, smoothies or delicious on toast.

About Native Beech Honeydew

Native Beech (Fuscospora spp.) is a dominant and resilient forest tree in New Zealand, forming vast, dense woodlands across mountain slopes and valleys. These trees can reach impressive heights of up to 30 meters, with rough, fissured bark and small, dark green leaves that give the canopy a textured, layered appearance. Native beech trees are uniquely associated with honeydew, produced by scale insects that inhabit the bark and excrete a sugary liquid. This sticky, sweet substance coats the tree trunks and drips from the bark, providing a vital food source for native birds, bees, and insects. The honeydew also contributes to the production of rich, dark honeydew honey, known for its robust, malty flavour.
