Creamy off-white in colour, with a smooth texture and clean, floral taste of sea salt and butterscotch.

Pōhutukawa honey is rare and unique to Aotearoa- New Zealand. Pōhutukawa is an extremely hardy tree capable of living over 1000 years. These magnificent natives adorn the coastlines and produce a brilliant display of crimson-blood red flowers for a brief flowering period in December. Often straddling rocks on limestone cliffs overhanging the South Pacific Ocean, where their aerial roots loft in the coastal sea breeze absorbing moisture and ozone.

About Pōhutukawa

Pōhutukawa (Metrosideros excelsa), known as the "New Zealand Christmas tree", is a resilient and iconic coastal tree celebrated for its vivid crimson-red flowers that bloom in December, producing copious amounts of sweet nectar. Growing up to 20 meters tall, it thrives along coastlines and rocky cliffs, with sprawling, twisted branches and dense, leathery leaves. The brush-like flowers have tiny petals but stand out with hundreds of fire-red, match-long pollen stalks tipped with bright yellow pollen. The tree's nectar attracts native birds and bees, yielding rich, flavorful honey and making Pōhutukawa a cherished symbol of summer and coastal beauty in New Zealand. Traditionally, parts of the tree were used in Māori medicine to treat wounds, burns, and skin infections, with bark and leaves prepared as poultices or infusions for healing.

We don't just do Mānuka Honey but a range of Native Varietal Honeys as well as Thyme and Clover. These varietals are crafted by bees collecting nectar from multiple unique and renowned native floral sources including Kāmahi, Kānuka, Pōhutukawa, and Rewarewa.
